Christmas in Barbados - Sweet Breat

Nothing might be as sweet a good ole fashioned Barbadian sweet bread. Bajan’s from near and far reminisce during the Christmas season of black cake, cassava pone and the all-time favourite a good piece of sweet bread

No Barbadian or visitor to Barbados should be without a delicious Bajan sweet bread at Christmas or any time of the year for that matter. To help everyone bring a “piece” of Barbados into their homes, please enjoy the following recipe this Christmas and throughout the year.

 

Dry Ingredients

4 cups flour / 4 tsp baking powder / 1/2 tsp salt / 1/4 teaspoon cinnamon / 1/4 tsp mixed spice / 1/4 grated nutmeg

Wet Ingredients

1/2 cup butter / 1/2 cup shortening / 1 1/2 cups sugar / 4 eggs / 2 cups milk / 1 tsp almond essence / 1 tsp vanilla essence / 2 cups grated coconut / 1 cup raisins / 1/2 cup cherries

Method

-        Sift flour, baking powder and dry spices together into a large bowl.

-        Using a stand mixer cream butter and shortening together in another larger bowl.  Add sugar and beat some more until light coloured and fluffy.  Add the eggs one at a time and beat after each addition, add the vanilla and almond essences and beat again.

-        Fold the flour into the creamed mixture, alternating the milk and flour in three stages.

-        Flour the raisins and cherries and fold into the batter along with the coconut

-        Place mixture into two large greased loaf pans and sprinkle with brown sugar.

-        Bake at 350 degrees Fahrenheit for 1 hour, or until a toothpick comes out clean.
